Instructions
- Place ¼ cup chopped apples in a small bowl with 1 tbsp water. Cover and microwave for 1 ½ minutes on high. Allow to cool then puree in a food processor or just mash well with a fork. Add ¼ tsp cinnamon and grissini crumbles and mix well. Press “crust” into a 9” pie pan, pushing it as much as you can across the bottom of the tin and up the sides.
- In a large bowl combine spiralized apples, ½ tsp cinnamon, ginger, nutmeg, salt and stevia. Toss well then let sit for 10 minutes to marinate.
- Add apple mix to the crust, cover loosely with foil and bake for 30 minutes in a 350-degree oven.
- Remove the foil and bake another 10 minutes.
- Divide into two plates and serve while warm.
Recipe Notes
- Rather than press crust into the pan, sprinkle over the top of the pie as a “crumble”. - Non-fat homemade applesauce can be used rather than steaming your own apples. - For AP Option, add blackberries, peaches or pears to the mix.
