Ingredients
Crust
  • 2 grissini stickscrumbled
  • 1/4cup chopped apples
  • 1/4tsp cinnamon
Filling
  • 2 3/4cups applespiralized
  • 1/2tsp cinnamon
  • 1/4tsp ginger
  • 1/4tsp nutmeg
  • 1/8tsp salt
  • 1scoope stevia extract powder
  • 1scoope stevia extract powder
Instructions
  1. Place ¼ cup chopped apples in a small bowl with 1 tbsp water. Cover and microwave for 1 ½ minutes on high. Allow to cool then puree in a food processor or just mash well with a fork. Add ¼ tsp cinnamon and grissini crumbles and mix well. Press “crust” into a 9” pie pan, pushing it as much as you can across the bottom of the tin and up the sides.
  2. In a large bowl combine spiralized apples, ½ tsp cinnamon, ginger, nutmeg, salt and stevia. Toss well then let sit for 10 minutes to marinate.
  3. Add apple mix to the crust, cover loosely with foil and bake for 30 minutes in a 350-degree oven.
  4. Remove the foil and bake another 10 minutes.
  5. Divide into two plates and serve while warm.
Recipe Notes

– Rather than press crust into the pan, sprinkle over the top of the pie as a “crumble”. – Non-fat homemade applesauce can be used rather than steaming your own apples. – For AP Option, add blackberries, peaches or pears to the mix.
