Instructions
- In a small bowl, whisk together lemon juice, mustard, vinegar, garlic, and thyme. Whisk in about 1 tsp water to thin out the mixture. You can add more if you prefer a thinner, lighter dressing.
- In a large bowl, add asparagus, lettuce, red onion and tomatoes. Toss to combine. Add crab meat and toss to combine.
- Drizzle dressing over the top of the salad and gently fold in to coat well.
Recipe Notes
This recipe is a great one to make ahead of time to serve up throughout the week! Simply store it in an airtight container and eat it throughout the week when you make a double batch.
