hCG Diet Seafood Recipe | Shaved Asparagus & Crab Salad – AP

Ingredients
  • 7oz jumbo lump crab
  • 1bunch Asparagusshaved (approx. 20 spears)
  • 3cups romaine lettucechopped
  • 1/2 red onionsliced
  • 1cup halved cherry tomatoes
  • 3tsp lemon juice
  • 1/4cup dijon mustard
  • 1 1/2tsp rice vinegar
  • 2tsp minced garlic
  • 2tsp freshly chopped thyme leaves
Instructions
  1. In a small bowl, whisk together lemon juice, mustard, vinegar, garlic, and thyme. Whisk in about 1 tsp water to thin out the mixture. You can add more if you prefer a thinner, lighter dressing.
  2. In a large bowl, add asparagus, lettuce, red onion and tomatoes. Toss to combine. Add crab meat and toss to combine.
  3. Drizzle dressing over the top of the salad and gently fold in to coat well.
Recipe Notes

This recipe is a great one to make ahead of time to serve up throughout the week! Simply store it in an airtight container and eat it throughout the week when you make a double batch.
