Ingredients
- 7 oz chicken breast (100g per 3.5 oz) boneless, skinless, diced
- 2 cups chicken broth SP Option: use water instead
- 1 cup water
- 1 1/2 cups sliced red onion
- 1/2 tsp ras el hanout add ½ tsp ginger per 1/2 tsp ras el hanout as alternative
- 1/2 tsp dried coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 2 cloves garlic minced
- 1 tbsp tomato paste
- 1/2 lemon juice & zest
- 1/2 cup cilantro
- 1 1/4 tsp salt
- 1 pinch black pepper

- 2 cups cauliflower riced-AP

Instructions
- Add a ¼ tsp salt, onion and garlic to a large saucepan. Pour over a ½ cup of broth and cook for 5 minutes over low heat until softened. Coat chicken with a ½ tsp salt and let sit on the counter.
- Add tomato paste, lemon juice, zest, ground spices and black pepper to garlic and onions. Stir to combine.
- Add the diced chicken to the pan and sear on all sides – 2-3 minutes.
- Add a ½ tsp salt, remaining stock and water to the pan and bring to a boil. For AP add zucchini.
- Reduce heat to a simmer, cover and leave for 25 mins until chicken is piping hot and completely cooked through.
- To serve, scatter with cilantro. For AP, serve over riced cauliflower.
Batch cooking tip or Alternate Cooking Method Option:
- Try adding the pre-cooked and shredded chicken to the stew towards the end of cooking. Ensure chicken is piping hot through.
Recipe Notes
To make cauliflower rice, simply pulse the cauliflower tops in a food processor to form a rice consistency. Stir fry in a tablespoon of broth for 5 minutes and season. Macros listed are for SP version.
