Ingredients
- 7 oz white fish filets (100g per 3.5 oz)
- 1 cup clementine slices peeled
- 2 cups fennel thinly sliced, sprinkled with ¼ tsp salt per 2 cups fennel
- 2 tbsp garlic thinly sliced
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp white vinegar a yummier ap option: white wine vinegar
- parsley Finely chopped, for garnish

Instructions
- Preheat the oven to 350°F and lay two large sheets of aluminum foil out on your work surface.
- Divide the clementine slices, sliced fennel, and garlic onto the center of each packet.
- Top with the fish filets.
- Season the fish with salt, pepper, and white wine vinegar, fold the foil and crimp tightly around the fish. (Make sure there are no holes for the steam to escape through).
- Bake for 20 minutes. (Alternatively, these can be cooked on a grill preheated to medium-high heat for about 15 minutes).
- Remove from the oven, carefully open the foil packets and allow the steam to escape.
- Transfer everything to plates and garnish with finely chopped parsley.
