Ingredients
- 2 Eggs
- 6 Egg Whites
- 1/8 tsp ground ginger
- 1/4 cup green onions chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp aminos
- 4 cups chicken broth You can use water instead

- 1/2 cup Shiitake mushrooms diced-AP

Instructions
- AP: add the mushrooms to a large saucepan with 1/8 cup of chicken broth. Sauté over medium heat until all the juice has evaporated then continue with the recipe as written.
- Pour the chicken broth into a medium pot.
- Add the salt, black pepper, aminos and ginger to the broth.
- Bring to a boil. Meanwhile, in a separate bowl, whisk the egg and egg whites.
- Pour the eggs into the boiling broth a little at a time. The eggs should cook immediately and turn into strands of cooked egg.
- Add green onion and serve.
Recipe Notes
You can make the broth for this recipe in advance and freeze it. Remove from freezer, return to saucepan to boil and add eggs and egg whites as instructed. Make it SP Recipe by removing the Shiitake Mushrooms. Macros listed are for AP version.

I made this soup with beef bouillon and used cabbage instead of mushrooms.
I seasoned with fresh thyme.

Man thank you SO much for writing in with this feedback. Really made my day today. I was SO nervous deciding to start this project. It’s so hard to make P2 recipes taste good- I felt so worried everyone would hate them and it would be a huge disaster lol. I’m so glad I forged ahead anyway. Oh and you’re right soup on a snowy day like that does sound divine. We’ve been having a dry winter here and I’m waiting anxiously to see some snow fall- I just love that white powdery stuff. ;)- Thanks again for the lovely comment.

What on earth in this soup is 9 carbs? I put all ingredients into my macros counter and it was 2.8 carbs per serving. Even without entering it in, I knew it couldn’t be 9 just by looking at it. Please explain.

In this case it’s mostly the chicken broth if you were using that. There’s 6g carbs in each serving of the chicken broth we used. Then 1 for green onions and 1 for mushrooms.
