Ingredients
  • 2 Eggs
  • 6 Egg Whites
  • 1/8tsp ground ginger
  • 1/4cup green onionschopped
  • 1/2tsp salt
  • 1/4tsp black pepper
  • 1tsp aminos
  • 4cups chicken brothYou can use water instead
AP variation:
  • 1/2cup Shiitake mushroomsdiced-AP
Instructions
  1. AP: add the mushrooms to a large saucepan with 1/8 cup of chicken broth. Sauté over medium heat until all the juice has evaporated then continue with the recipe as written.
  2. Pour the chicken broth into a medium pot.
  3. Add the salt, black pepper, aminos and ginger to the broth.
  4. Bring to a boil. Meanwhile, in a separate bowl, whisk the egg and egg whites.
  5. Pour the eggs into the boiling broth a little at a time. The eggs should cook immediately and turn into strands of cooked egg.
  6. Add green onion and serve.
Recipe Notes

You can make the broth for this recipe in advance and freeze it. Remove from freezer, return to saucepan to boil and add eggs and egg whites as instructed. Make it SP Recipe by removing the Shiitake Mushrooms. Macros listed are for AP version.
