Instructions
- Shave asparagus by holding the base of the stalk and using a vegetable peeler to peel downward, shaving ribbons off of the stem.
- Place shaves asparagus and thin onion slices in a medium bowl.
- Whisk lemon juice, mustard, garlic, chives, salt and pepper together in small bowl.
- Toss dressing and asparagus mix together.
- Serve chilled

Slice onions with a mandolin if possible to get very thin pieces
Add arugula to the salad to bulk it up
Once the stems are shaved, you can quickly steam or boil them to make them a little more tender or if you would like to serve this as a hot side dish rather than a cold salad.
Make this a complete meal by adding 3.5 oz of your favorite P2 protein like grilled chicken.
