Ingredients
- 2 cups green beans shaved - AP
- 1 tbsp nutritional yeast AP
- 2 tbsp red wine vinegar (+2 tsp)
- 1/4 cup basil fresh
- 2 tsp garlic minced
- 1/4 cup red onion diced
- 1 cup cherry tomatoes sliced in half
- 1 tsp salt
- 1/4 tsp pepper

Instructions
- Cut the green beans at a steep angle in ¼” widths.
- 2 options for cooking green beans:
- Bring a pot of about 2 quarts of water with 2 tsp salt to boil. Cooking water should taste very salty like the sea. Once water is boiling, submerge green beans inside a colander or sieve into the water for 1-2 minutes, until bright green.
- Steam green bean beans for 1-2 minutes or until bright green. Strain and set aside to cool.
- In a small bowl, whisk together vinegar, basil, onion, garlic, salt and pepper.
- Add green beans and tomatoes to a large bowl and toss together with the dressing.
- Sprinkle with nutritional yeast and serve chilled.
Recipe Notes
Pairs great with grilled chicken chunks. You can add chopped apple for a fruit option.
