Cut the green beans at a steep angle in ¼” widths.
2 options for cooking green beans:
Bring a pot of about 2 quarts of water with 2 tsp salt to boil. Cooking water should taste very salty like the sea. Once water is boiling, submerge green beans inside a colander or sieve into the water for 1-2 minutes, until bright green.
Steam green bean beans for 1-2 minutes or until bright green. Strain and set aside to cool.
In a small bowl, whisk together vinegar, basil, onion, garlic, salt and pepper.
Add green beans and tomatoes to a large bowl and toss together with the dressing.
Sprinkle with nutritional yeast and serve chilled.
