Ingredients
  • 2cups green beansshaved – AP
  • 1tbsp nutritional yeastAP
  • 2tbsp red wine vinegar(+2 tsp)
  • 1/4cup basilfresh
  • 2tsp garlicminced
  • 1/4cup red oniondiced
  • 1cup cherry tomatoessliced in half
  • 1tsp salt
  • 1/4tsp pepper
Instructions
  1. Cut the green beans at a steep angle in ¼” widths.
  2. 2 options for cooking green beans:
  3. Bring a pot of about 2 quarts of water with 2 tsp salt to boil. Cooking water should taste very salty like the sea. Once water is boiling, submerge green beans inside a colander or sieve into the water for 1-2 minutes, until bright green.
  4. Steam green bean beans for 1-2 minutes or until bright green. Strain and set aside to cool.
  5. In a small bowl, whisk together vinegar, basil, onion, garlic, salt and pepper.
  6. Add green beans and tomatoes to a large bowl and toss together with the dressing.
  7. Sprinkle with nutritional yeast and serve chilled.
Recipe Notes

Pairs great with grilled chicken chunks. You can add chopped apple for a fruit option.
