- 1 grapefruit
- 1 Star Anise
- 1 Vanilla bean scraped
- 1/8 tsp powdered stevia
- 2 Tbsp lemon juice
- 1/4 cup water
- AP OPTION:
- 1/4 tsp Glucomannan
- 7 oz fat free cottage cheese
Ingredients

- Using a peeler, peel the skin away from the grapefruit, removing only the yellow portion, leaving the white pith on the fruit.
- Slice the peeled yellow skin into very fine strips. Place in small saucepan.
- Cut the white pith off of the grapefruit and discard.
- Slice grapefruit flesh into segments and add to saucepan.
- Add remaining ingredients EXCEPT stevia to a small saucepan and bring to a boil over medium heat.
- Boil for about 5 minutes to thicken. COver the pot and let sit for 15 minutes.
- Remove anise star and discard.
- Puree half the marmalade then blend back into the remaining marmalade, add the stevia, and enjoy warm or chilled. If doing AP, add the glucomanann to thicken the marmalade.
- If you do not have a vanilla bean, use 1 tsp vanilla extract - For an AP version, thicken the marmalade with 1 Tbsp unflavored pectin. Add in the sauce pot with all the other ingredients. - This really does need the creamy light cottage cheese to balance - it’s too strong a flavor to eat the marmalade plain on it’s own. - You can leave out the grapefruit skin for a less intense flavor.
