Ingredients
- 2 large eggs
- 6 large egg whites
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp finely chopped rosemary or 1 tsp dried
- 1 tbsp Swerve SP Option: 1 scoop stevia
- 2 tsp baking powder
- 2 tbsp milk
- 3 cups minced yellow onion

Instructions
- Preheat the oven to 350°F.
- Spray a large cast-iron pan with non-stick cooking spray and place over medium heat.
- Sauté the onions for 15-20 minutes, until golden brown and caramelized.
- While the onions are sautéing, whisk together the remaining ingredients.
- Grease two ramekins with non-stick cooking spray and evenly divide the onions on the bottom of the dishes.
- Pour half of the egg mixture into each ramekin and bake for 15-20 minutes, until set.
