Instructions
Preheat the oven to 350°F.
Spray a large cast-iron pan with non-stick cooking spray and place over medium heat.
Sauté the onions for 15-20 minutes, until golden brown and caramelized.
While the onions are sautéing, whisk together the remaining ingredients.
Grease two ramekins with non-stick cooking spray and evenly divide the onions on the bottom of the dishes.
Pour half of the egg mixture into each ramekin and bake for 15-20 minutes, until set.
