|
- 7 oz chicken breasts boneless, skinless
- 1/4 tsp salt
- 1/2 cup diced apple (firm crisp apple such as Granny Smith or Gala)
- 1/4 cup minced onion
- 2 tsp minced garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried sage or 2 tbsp fresh chopped sage
- 1/2 tsp dried parsley
- 4 cups thinly sliced red cabbage
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp apple cider vinegar
- 1 cup water
Ingredients
STUFFED CHICKEN:
CABBAGE:
|
- Combine the diced apple, minced onion, minced garlic, salt, pepper, sage, and parsley in a small bowl.
- Butterfly the chicken breasts to create a pocket for the stuffing and sprinkle with the salt.
- Stuff each chicken breast with half of the apple mixture and secure each one closed with a couple of toothpicks.
- Heat a large pan over medium-high heat and spray with non-stick cooking spray.
- Sear the chicken breast for 4-5 minutes per side, then remove from the pan.
- Add the sliced cabbage to the pan, season with salt and pepper and sauté for 3-4 minutes, until it begins to wilt.
- Add the chicken broth and apple cider vinegar to the pan and mix well.
- Place the chicken breasts on top of the cabbage, cover, and simmer for 10-15 minutes, until most of the chicken broth has evaporated and the chicken is cooked through.
Notes: You can increase the apple to 1 cup which will equal ½ a fruit serving, but the mixture will not fit inside the chicken - in this case you can just cook the filling alongside the chicken in the pan if you choose.

Apologies! Rated the wrong recipe! Hopefully you can remove that single star. 🙁

Hi- I’m assuming the “chicken broth” in step 7 is actually the “water” in the recipe’s ingredients list. Correct? I would imaging they would be interchangeable depending on taste.
