Ingredients
STEAK AND CHIMICHURRI
- 7 oz sirloin (100g per 3.5 oz) divided into two steaks
- 3/4 cup Fresh Cilantro
- 1/4 cup fresh parsley
- 2 tsp garlic minced
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes less if you don’t care for too much spice
- 1/4 tsp salt
- 2 tbsp red onion minced
- 1/4 cup water
- 1/8 cup white vinegar

- 1/4 tsp salt

Instructions
- To make the fries, preheat oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
- Spread sliced fennel in an even layer on the pan. Bake for 20 to 25 min, turning halfway through, until crisp and golden.
- Remove from the oven and season with salt. Keep warm until ready to serve.
- To make the chimichurri, add cilantro, parsley and garlic to a food processor. Pulse until finely chopped.
- Add oregano, red pepper flakes, salt, red onion, vinegar and ¼ cup water. Blend for 20 seconds to combine. If the mixture is too thick, add more water as needed. Rest in the refrigerator until ready to serve.
- To make the steaks, season steaks with salt and pepper. Heat grill or grill pan to medium-high heat. Once hot add steaks and cook to desired doneness, approx. 4 to 5 min per side for medium rare to medium.
