7ozsirloin(100g per 3.5 oz) divided into two steaks

1/2tspred pepper flakesless if you don’t care for too much spice

FENNEL FRIES

Instructions
To make the fries, preheat oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
Spread sliced fennel in an even layer on the pan. Bake for 20 to 25 min, turning halfway through, until crisp and golden.
Remove from the oven and season with salt. Keep warm until ready to serve.
To make the chimichurri, add cilantro, parsley and garlic to a food processor. Pulse until finely chopped.
Add oregano, red pepper flakes, salt, red onion, vinegar and ¼ cup water. Blend for 20 seconds to combine. If the mixture is too thick, add more water as needed. Rest in the refrigerator until ready to serve.
To make the steaks, season steaks with salt and pepper. Heat grill or grill pan to medium-high heat. Once hot add steaks and cook to desired doneness, approx. 4 to 5 min per side for medium rare to medium.
