Meal components: protein + veggie
Instructions
- Add 1 3/4 cup radicchio to a large pan with chicken broth, 1 tbsp balsamic, stevia, shallot and smoked sea salt. Cook over medium heat, stirring occasionally, for about 8 minutes. Radicchio should be tender. Set aside.
- In a large bowl, mix ground beef, dried thyme and salt.
- Press chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap.
- Spread cooked radicchio over the top of crust and drizzle with any extra sauce from the pan. Sprinkle with fresh thyme then bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
- Thinly slice remaining radicchio.
- Remove meatza from the oven, drizzle with remaining balsamic and sprinkle with uncooked radicchio slices to add flavor and color.
Recipe Notes
- AP: Add peach slices to meatza before baking. - The recipe is written for 2 servings. If you want to cook more, you’ll need to adjust the amount of ingredients.
