Ingredients
- 7 oz shrimp peeled, cleaned
- 1/2 tsp minced garlic
- 1 tbsp egg white SP: don't use
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup water
- Sauce
- 1/2 cup strawberries
- 2 cup spinach
- 1 tbsp fresh mint
- 1/4 tsp salt
- 1 scoop powdered stevia
- Toppings
- 1 1/2 cups strawberries
- 6 cups baby spinach
- 1 tsp garlic minced
- 1 tbsp Mint chopped
- 1 tsp vanilla extract

Instructions
- Sauce: Place all sauce ingredients in a blender and puree until smooth. Set aside.
- Crust: Add shrimp and garlic to a large saute pan along with water. Cover pan and heat over medium heat, cooking the shrimp for 5 minutes.
- Drain water and transfer shrimp and garlic to a food processor. Let cool for 5 minutes.
- Add egg white, salt and pepper to food processor and pulse, chopping the shrimp well.
- Press shrimp mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make shrimp as flat and even as possible. Remove plastic wrap
- Bake in a 350 degree F oven for 15 minutes.
- Place remaining strawberries in a baking pan and toss with vanilla extract. Roast in the oven for 15 minutes
- Spread strawberry sauce across the top of cooked shrimp crust then top with roasted strawberries and spinach. Serve warm.
Recipe Notes
- Place the pizza back in the oven to wilt the spinach for a warm version or serve with the spinach fresh for a more salad like pizza.
- Puree 1 cup of the strawberries for the sauce if you’d like more sauce and less whole fruit.
- This same pizza will be great with a chicken crust rather than shrimp (7oz ground chicken, ¼ tsp salt, ½ tsp garlic for the crust).
