Ingredients
- 7 oz chicken breast (100g per 3.5 oz) chopped, grilled
- 2 cups broccoli florets AP
Cauliflower cheese sauce:
- 2 tbsp chicken broth fat-free
- 2 tbsp onion chopped
- 1 tsp garlic chopped
- 1 1/2 cups cauliflower chopped - AP
- 1/2 cup chicken broth
- 5 tsp nutritional yeast AP
- 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/8 tsp black pepper

Instructions
- Make the Sauce by heating 2 tablespoons chicken broth in a medium-sized pot. Sauté onions until translucent then add garlic.
- Add cauliflower and chicken stock and cover. Steam for 5 minutes.
- Add everything from the pot into a blender and blend until smooth. Add nutritional yeast, salt and lemon juice. Set sauce aside
- Place cooked chicken and steamed broccoli in a small casserole dish and pour cheese sauce over the top.
- Bake in a 350-degree oven approx 20 minutes until cheese sauce is bubbling around the edges. Remove from the oven and serve while hot!
Recipe Notes
Add cooked miracle rice to the casserole along with the chicken and broccoli for an extra filling dinner.
This recipe freezes well so make a large casserole (2 or 3x the recipes) and freeze to use at a later date.
The cauliflower cheese sauce is also delicious on plain chicken, miracle noodles or tossed with cooked ground beef.
Layer the chicken and broccoli in an instant pot and top with the cheese sauce for a quick way to cook!

There is no way that this recipe is P2. It is TOOOOO GOOOOOOD! 🙂 There is a problem with the salt it is not calculating correcly. It told me for 6 servings to use 9 teaspoons. I think there may be an extra space in the fraction. Keep up the awesome work ladies!

YUM! My new favorite. I added in some chopped Jalapeno and made again in mini ceramic pots and layered chicken, broccoli, sauce, chicken, broccoli, sauce, etc. Cute and very good!

Hey Teresa! Yes actually how thick the sauce becomes directly has to do with how long you simmer it- so if it’s too water still, just stir it longer on the stove and it will actually get to the point where it’s too thick lol! I had to actually add water back to it when we were shooting this dish because we had it simmering too long lol. You can also probably start with less water to get to that point faster. I hope that helps!

Really good recipe. I was surprised how good the sauce tasted. It’s like my whole opinion on food has changed. HEALTY FOOD CAN BE GOOD TOO. My only issue was I tried it in my Insta post and I made mush! It tasted good but the servings were very small. Maybe if I would of baked it the servings would be bigger?

I absolutely loved this meal. My only concern is the vegetables in each serving. If you have 1c. of broccoli and 3/4c. of cauliflower per serving that is nearly double the amount allowed on PS2.

There is actually no allotted amount of vegetables in the original hCG diet plan – 1 cup is not enough vegetables in many cases to reach 500 calories for the day. So we make the recipes based on calorie amounts per meal if that makes sense, which will often include more than 1 cup of vegetables.
