- 7 oz ground beef (100g per 3.5 oz) 96% lean
- 10 oz zucchini with peel, sliced into 16 rounds for 10 oz (approx 11g per round)-AP
- 1/2 cup canned tomatoes
- 1 tsp dried basil
- 1 tsp garlic minced
- 1 tbsp onion chopped fine
- 1/4 tsp ground black pepper
- 1 tsp salt
- 1 1/2 tsp nutritional yeast AP
- 2 tbsp beef broth (half for the meat, half for the sauce) fat free

- Lay the zucchini slices on a lined tray and sprinkle with 1/2 tsp salt. Let sit for 5 minutes then place on a hot grill. Sear each side for 2 minutes, remove and place back on the tray. Set aside.
- Sauté the ground beef, 1 tbsp beef broth, 1/2 tsp salt and1/4 tsp black pepper. Break up the ground beef while stirring so there are no large clumps. Set aside.
- Add 1 tbsp beef broth, minced garlic and onions to a small pan and sauté until the garlic begins to brown.
- Add the canned tomatoes, basil, 1/4 tsp black pepper and 1/2 tsp salt to the pan. Bring to a boil.
- Boil for 3-5 minutes or until slightly thick. Remove from heat and puree. Should make about 1.5 cups of sauce.
- Place 1.5 tbsp of sauce on the 16 grilled zucchini slices - then top each slice with 1 tbsp ground beef.
- Bake in a 350 degree F oven for 5 minutes, remove and sprinkle with nutritional yeast. Eat while hot.
You do not need to grill the zucchini slices if you are looking to save time but it does add a nice extra flavor. Make a large batch of sauce and freeze in 1/4 cup portions. Remove from freezer and thaw whenever you need sauce 296 grams is about 1 1/2 medium sized zucchinis. You should be able to get about 16 slices of zucchini for the pizza bites.
