Ingredients
Sauce:
  • 2tbsp tomato paste
  • 1/4cup water
  • 1tsp garlic
  • 2tsp oregano
  • 1tbsp fresh parsley
  • 1tbsp balsamic vinegar
  • 1/4tsp salt
Topping:
  • 3cups cucumber slices
  • 1tbsp roasted garlicsliced
  • 1/4cup chopped dill
  • 2tbsp lemon juice
Pizza Crust:
  • 7oz ground chicken crust
  • 1tsp lemon zest
  • 1/4tsp salt
  • 1/4tsp ground black pepper
  • 1tbsp balsamic vinegar
  • 1/4tsp salt
Instructions
  1. Blend together all the sauce ingredients until smooth. Set aside.
  2. In a small bowl, toss cucumbers, roasted garlic, dill and lemon juice together in a bowl. Set aside to marinate.
  3. In a separate large bowl, mix the ground chicken, lemon zest, ground black pepper and salt.
  4. Press the chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove the plastic wrap.
  5. Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
  6. Remove from the oven and spread the sauce across the top of the crust.
  7. Return the meatza to the oven for one minute to heat the sauce then remove from oven, and spread marinated cucumber slices across the top of the pizza.
Recipe Notes

– AP: use fresh sliced tomatoes in addition to cucumbers.
