Ingredients
- 7 oz top sirloin
- 1 tbsp fresh rosemary sprigs
- 3/4 tsp salt
- 1 tbsp garlic minced
- 4 cups Kale chopped, or spring mix lettuce
- 1 cup cranberries cut in half - AP
- 1.5 scoops powdered stevia or to taste*
- 1/2 cup sliced red onion
Dressing:
- 4 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp shallots
- 2 tsp dijon mustard
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 tsp coconut oil (optional see notes) - AP

Instructions
- Make the dressing by whisking all ingredients together.
- Toss sliced cranberries together with stevia extract and let sit for 10 minutes.
- In a large bowl, combine kale, cranberries and red onion. Toss with the dressing.
- Sprinkle rosemary, salt and minced garlic on top of sirloin. Rub it into the meat and let sit for an hour.
- Grill sirloin to desired doneness (medium rare is best!).
- Serve sirloin hot along with the salad. Optional to dice steak into small cubes for salad.
Recipe Notes
Skip the coconut oil in the dressing if desired, the dressing will just be slightly more tangy
Use Simple Girl Balsamic dressing rather than making your own
Let steaks sit overnight with the dry rub to infuse more flavor
*This is based on the Trim Healthy Mama stevia brand that I personally use and linked to in the recipe which is quite concentrated. Stevia potency really varies from brand to brand so you may need to adjust the level of stevia to more or less depending on which one you use.
