Ingredients

- 7 oz boneless skinless chicken breast
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried basil
- BRUSCHETTA
- 2 cups roma tomatoes diced
- 2 tbsp minced yellow onion
- 2 tsp minced garlic
- 2 tbsp freshly chopped basil
- 1 1/4 tsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
- Pinch of red pepper flakes

Instructions
- In a medium bowl, stir together ingredients for the bruschetta. Place in the refrigerator until ready to serve.
- On a flat surface, lay down a piece of cling wrap. place chicken on top and layer with another sheet of cling wrap. Pound the chicken out thinly, approx. 1/4 to 1/2-inch thick.
- In a small bowl, stir together salt, black pepper, and dried basil. Season chicken with spice mixture.
- Heat grill, or if you don’t have a grill, a cast iron skillet. Once the grill or skillet is hot, add chicken. Cook until browned on both sides and cooked through, approx. 5 minutes per side.
- Divide chicken evenly between two plates. Top with bruschetta mixture. Serve immediately.
Recipe Notes
The longer you let the tomato mixture sit, the more flavorful it will get! Try to let it sit at least 15 minutes in the refrigerator, but you can also make it the day before.
