Instructions
- Saute the onions in a large stock pot along with a splash of the vegetable broth (add about 2 tablespoons of the broth to help cook the onions). Let broth evaporate and allow the onions to brown slightly.
- Add the garlic and stir, cook for about 30 more seconds.
- Add vegetable broth and water and bring to a boil. Lower heat and simmer for 30 minutes.
- Add chives, salt, pepper, hot sauce and coconut aminos. Stir and serve hot
Recipe Notes
This soup freezes very well
If allowing mixed vegetables, add ½ cup chopped celery
If allowing mixed veggies and AP, add 1 cup button mushrooms
Add more or less hot sauce depending on your taste.

Is the water optional or should it be added with the vegetable broth? It’s listed in the ingredients but not in the directions.

Oh sorry about that! We fixed the directions so it says to add both the broth and water.
