Ingredients
SP:
- 7 oz chicken breast (100g per 3.5 oz) diced into large chunks
- 2 cups shallots peeled and halved
- 2 cloves garlic minced
- 2 tbsp chopped fresh rosemary
- 2 tbsp lemon juice
- 1 tbsp dijon mustard
- Zest of 1/2 medium lemon
- 1/16 tsp powdered stevia *
- 1/4 tsp sea salt
- black pepper pinch
For AP:
- 10 small button mushrooms approx 11g per button mushroom -AP
- 1/2 red bell pepper seeded and quartered-AP

Instructions
- Pre-heat the oven to 400'F (200'C). Line a baking tray with baking parchment.
- Use metal skewers or soak 4 wooden kebab sticks in water for 20 mins.
- Add the diced chicken and halved shallots to a mixing bowl. For AP, replace 4 shallots with 10 small mushrooms and 1/2 a quartered red bell pepper.
- To another bowl, add mustard, lemon juice, zest, rosemary, minced garlic, stevia, salt and pepper. Mix well.
- Tip the chicken and shallots into the marinade and stir thoroughly until evenly coated. Cover and refrigerate for 20 mins.
- Remove the marinated chicken from the fridge and divide into 4. Thread shallots and chicken in turn onto each of the kebab skewers.
- Lay the kebabs on lined baking tray and drizzle over any extra marinade.
- Place in center of the oven to cook for 25 mins, until cooked through. Turn halfway through cooking.
Recipe Notes
Batch cooking tip or Alternate Cooking Method Option: These kebabs would be great cooked on the BBQ! Barbecue 15 minutes, turning halfway through. Macros listed are for AP version. *This is based on the Trim Healthy Mama stevia brand that I personally use and linked to in the recipe which is quite concentrated. Stevia potency really varies from brand to brand so you may need to adjust the level of stevia to more or less depending on which one you use.

Hi! This recipe is just delicious! I have batch cooked many last week! I do have a question about confusion on this recipe. I decided to stick to the SP protocol & not use the red-peppers. I noticed that in the description for the AP it says the calorie per serving is 252 cal.
Then I noticed under the SP Macros, it says with Shallots only, it was 261 cal. So am I understanding correctly that with the red peppers added, the calories are slightly less per serving? I just want to make sure I am as accurate as possible & am understanding correctly. Thanks so much! 🙂

Oh good I’m so glad you enjoyed it! That was one of my favorites too. Honestly anything grilled is pretty yummy right? Yes, so for the AP version the instructions are to actually replace some of the onion amount with the bell pepper and mushroom so that’s why the calories are listed the way they are – “For AP, replace 4 shallots with 10 small mushrooms and 1/2 a quartered red bell pepper.” – make sense? So yes the full onion amount for SP is that calories- you can always use a little less onion if need be if you need the recipe to be a little lower calorie- I hope that helps! – Rayzel
