Ingredients
- 2 yellow crookneck squash AP
- 1/4 cup red bell pepper minced - AP
- 2 tbsp lemon juice
- 2 tsp dijon mustard
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp salt or to taste
- 1/4 tsp pepper
- 2 tsp nutritional yeast AP

Instructions
- Slice the squash, lengthwise, very thinly using a mandoline or very sharp knife.
- Combine the sliced squash and minced red bell pepper in a bowl.
- Whisk together the lemon juice, Dijon mustard, dried herbs, salt, pepper and nutritional yeast in a small bowl.
- Drizzle the dressing over the squash and toss until well coated. Divide into 2 servings

I do totally like the idea of doing recipe videos- it just takes so much more time and work, not feasible at the moment, but perhaps in the future I can do some of people’s favorites!
