Ingredients
  • 2 yellow crookneck squashAP
  • 1/4cup red bell pepperminced – AP
  • 2tbsp lemon juice
  • 2tsp dijon mustard
  • 1/2tsp dried basil
  • 1/2tsp dried oregano
  • 1/4tsp saltor to taste
  • 1/4tsp pepper
  • 2tsp nutritional yeastAP
Instructions
  1. Slice the squash, lengthwise, very thinly using a mandoline or very sharp knife.
  2. Combine the sliced squash and minced red bell pepper in a bowl.
  3. Whisk together the lemon juice, Dijon mustard, dried herbs, salt, pepper and nutritional yeast in a small bowl.
  4. Drizzle the dressing over the squash and toss until well coated. Divide into 2 servings
