Instructions
Slice the squash, lengthwise, very thinly using a mandoline or very sharp knife.
Combine the sliced squash and minced red bell pepper in a bowl.
Whisk together the lemon juice, Dijon mustard, dried herbs, salt, pepper and nutritional yeast in a small bowl.
Drizzle the dressing over the squash and toss until well coated. Divide into 2 servings
