Ingredients
- 7 oz ground chicken (100g per 3.5 oz) skinless
- 4 tomatoes large
- 1 tbsp onion chopped fine
- 1/2 tsp garlic minced
- 1 tsp salt
- 1 tsp dried oregano or 1 tbsp fresh per 1 tsp dried oregano

Instructions
- Cut a ½-inch slice off the top of each tomato. Scoop out and discard the seeds. Remove most of the flesh and all the excess juice (save for a refreshing blended tomato drink later!) Place the tomato cups on a rimmed baking sheet, lined with parchment paper. Set aside.
- Preheat the oven to 350 degrees F.
- In a medium skillet over medium heat, saute the onion and garlic until tender and softened approximately 3 minutes. Add the ground chicken and cook for 6 minutes, breaking up the meat with a spoon until crumbly.
- Stir in salt, oregano, rosemary, garlic powder, ground cumin, & ground coriander.
- Remove from heat. Stir in fresh parsley.
- Stuff ¼ cup of the chicken mixture into each of the tomatoes. Cover loosely with foil and bake until the tomatoes are tender and filling is hot all the way through, approximately 25 minutes.
Recipe Notes
You can also use 95-99% ground beef in this recipe instead of chicken, depending on your preference.
This is the perfect meal to make and cook ahead of time for lunches throughout the week. To make sure the tomatoes don’t get too soft, simply cook them 5-10 minutes less than the cooking time. Reheat in the microwave for 2-3 minutes when ready to eat.

Hi! Just making sure, I can have 2 of these stuffed tomatoes for only 190 cal? I keep asking the same questions LOL but I just want to make sure I’m following it correctly. I haven’t made this recipe yet but plan to today! YUM! Down 30 lbs on my first round of HCG! YAY… Thank you!

Hello! Yep that’s right – the recipe as written serves two, and the macros are the per serving nutrition, so yep 2 tomatoes per serving. I hope that helps! Wow 30lbs so proud of you that’s fantastic! The biggest thing is to make sure you are having the 3.5 oz of meat protein per serving- that’s where most the calories are- so you’d have about 1.7 oz of meat in each tomato if that makes sense.

have you attempted at making these in an instant pot instead of in the oven? Any suggestions for doing it that way? I’ve made the peppers in the instant pot before and had them turn out great.. just wondering!

I love this idea Katrina! I haven’t tried it but I bet it’s very possible it would be great – if you try let us know how they come out or what time worked best!
