Instructions
Place each filet of cod on a piece of foil.
Mix 1/4 tsp salt, garlic powder and red pepper flakes together. Sprinkle mix on top of each cod filet, dividing evenly.
Divide lemon juice between foil cod packets.
Seal foil packets and place on a sheet tray. Bake in a 450 degree F oven for 8 minutes.
In a separate small bowl, whisk sherry, salt, pepper and stevia together.
Place radicchio in large bowl and pour dressing over. Toss together to cover lettuce in dressing.
Add orange slices to salad and divide between two plates.
Place warm cod on top of salads and serve.
