Phase 2 hCG Diet Recipe | Moroccan Chicken Stew w/ Onions | LSP + SP + AP
  • 7oz chicken breast(100g per 3.5 oz) boneless, skinless, diced
  • 2cups chicken brothSP Option: use water instead
  • 1cup water
  • 1 1/2cups sliced red onion
  • 1/2tsp ras el hanoutadd ½ tsp ginger per 1/2 tsp ras el hanout as alternative
  • 1/2tsp dried coriander
  • 1/2tsp ground cinnamon
  • 1/2tsp ground cumin
  • 2cloves garlicminced
  • 1tbsp tomato paste
  • 1/2 lemon juice & zest
  • 1/2cup cilantro
  • 1 1/4tsp salt
  • 1pinch black pepper
AP ingredient variations:
  • 1cup zucchinidiced-AP
  • 2cups cauliflowerriced-AP
  1. Add a ¼ tsp salt, onion and garlic to a large saucepan. Pour over a ½ cup of broth and cook for 5 minutes over low heat until softened. Coat chicken with a ½ tsp salt and let sit on the counter.
  2. Add tomato paste, lemon juice, zest, ground spices and black pepper to garlic and onions. Stir to combine.
  3. Add the diced chicken to the pan and sear on all sides – 2-3 minutes.
  4. Add a ½ tsp salt, remaining stock and water to the pan and bring to a boil. For AP add zucchini.
  5. Reduce heat to a simmer, cover and leave for 25 mins until chicken is piping hot and completely cooked through.
  6. To serve, scatter with cilantro. For AP, serve over riced cauliflower.
Batch cooking tip or Alternate Cooking Method Option:
  1. Try adding the pre-cooked and shredded chicken to the stew towards the end of cooking. Ensure chicken is piping hot through.
Recipe Notes

To make cauliflower rice, simply pulse the cauliflower tops in a food processor to form a rice consistency. Stir fry in a tablespoon of broth for 5 minutes and season. Macros listed are for SP version.
