P2 hCG Diet Veggie Recipe | Warm Greens w/ Garlic Grissini Croutons | LSP + SP
Ingredients
  • 8 1/2cups arugula
  • 2 grissini sticks
  • 2tsp minced garlic
  • 2tbsp minced red onion
Apple Cider Dijon Dressing
  • 2tsp dijon mustard
  • 1tbsp apple cider vinegar
  • 2tbsp chicken brothSP Option: use water instead
  • 1/2tsp salt
  • 1/4tsp pepper
  • 1/2tsp dried thyme
Instructions
  1. Heat a large skillet over medium heat and spray lightly with non-stick cooking spray.
  2. Add the onion and garlic to the pan and sauté for 2-3 minutes, until softened and fragrant.
  3. Break the grissini sticks into ½” pieces, add to the pan, and toast for 1-2 minutes.
  4. In a small bowl, whisk together the dijon mustard, apple cider vinegar, chicken broth, salt, pepper, and thyme.
  5. Add the arugula to the pan and toss until it begins to wilt slightly.
  6. Remove from heat, drizzle with the vinaigrette, and toss until well coated.
  7. Divide between two plates and serve.
