P2 hCG Diet Veggie Recipe | Shaved Fennel and Mint Salad | SP

Ingredients
  • 2 grissini sticks
  • 2.5cups fennel bulbssliced thinly
  • 3tsp sherry vinegar
  • 1tsp dijon mustard
  • 1/4tsp salt
  • 1tsp scoop powdered stevia1/32per scoop
  • 1/4cup fresh mintchopped
  • 1/4cup chicken brothSP: use water instead
  • 2tbsp parsley
  • 3tbsp lemon juice
Instructions
  1. Crush grissini sticks using a rolling pin or a food processor in order to make crumbs.
  2. Place lemon juice, mustard, salt, stevia, mint and vinegar in a blender. Pulse then add the chicken broth and blend until well combined.
  3. Shave fennel into thin slices using a mandolin or a sharp knife. Place in large bowl.
  4. Chop some fennel fronds too and add them into a bowl with the sliced fennel.
  5. Add mint vinaigrette to fennel slices and toss. Marinate for at least an hour.
  6. Divide marinated fennel between two plates. Top with parsley and grissini crumbs.
