Ingredients
  • 2 Tbsp Vegetable BrothSP: use water instead
  • 4cups Vidalia Onionspeeled, sliced thinly
  • 1/2tsp fresh thymeminced
  • 2tbsp cider vinegar
  • 1-2 scoops powdered stevia extract
  • 1/2tsp cinnamon
Instructions
  1. Heat vegetable broth in a large saute pan.
  2. Add onions, thyme and cinnamon.
  3. Cook, stirring occasionally for about 15 minutes. Onions should be soft and golden.
  4. Mix in vinegar and stevia extract.
  5. Store in an airtight container in the fridge for up to two weeks. Portion as needed.
Recipe Notes

– Use a mandolin slicer to cut the onions very thin. – If the vegetable broth evaporates and the onions are burning in the hot pan, add a tablespoon or two of water as needed to prevent burning.
