P2 hCG Diet Veggie Recipe | Cream of Celery Soup | SP + LSP
Ingredients
  • 6cups chopped celerystalks and leaves
  • 1/4cup minced onion
  • 2tsp minced garlic
  • 4cups fat free chicken brothSP Option – use water instead
  • 2tbsp fat-free plain Greek yogurtSP Option – do without yogurt
  • 1tsp salt
  • 1/2tsp pepper
  • 1/2tsp celery seed
  • Finely chopped parsleyfor garnish
Instructions
  1. Preheat the oven to 350°F.
  2. Spray a large baking sheet with non-stick cooking spray. Arrange the chopped celery, minced onion, and garlic evenly on the baking sheet and season with salt and pepper.
  3. Roast for 15-20 minutes, until softened and golden brown.
  4. Transfer the celery mixture to a high-speed blender.
  5. Add the chicken broth, greek yogurt, salt, pepper, and celery seed and blend for 1-2 minutes, until smooth and creamy.
  6. Divide evenly between two bowls, garnish with parsley, and serve.
