Instructions
Preheat the oven to 350°F.
Spray a large baking sheet with non-stick cooking spray. Arrange the chopped celery, minced onion, and garlic evenly on the baking sheet and season with salt and pepper.
Roast for 15-20 minutes, until softened and golden brown.
Transfer the celery mixture to a high-speed blender.
Add the chicken broth, greek yogurt, salt, pepper, and celery seed and blend for 1-2 minutes, until smooth and creamy.
Divide evenly between two bowls, garnish with parsley, and serve.
