Ingredients
Sweet Basil Dressing
  • 1/4cup red wine vinegar
  • 1/2tsp salt
  • 1/2tsp ground black pepper
  • 1 scoop stevia
  • 1/2cup basilchopped
Salad
  • 2cup Clementine segments
  • 2tbsp red onionthinly sliced
  • 1cup fennelthinly sliced
  • 1cup fennelthinly sliced
Instructions
  1. In a large bowl, whisk together vinegar, salt, pepper, stevia and basil.
  2. Add the clementines, onion and fennel and toss well.
  3. Serve chilled.
Recipe Notes

– AP Option: add more sliced onion, coconut oil to dressing and mixed greens.

– This salad is even better the next day after the fennel has marinated in the dressing.
