Ingredients
  • 3cups diced cucumber(peeled, halved, seeded)
  • 2.5cups thinly sliced radishes
  • 3/4cup thinly sliced green onion
  • 1 1/3cup fat free cottage cheese
  • 1/2tsp salt
  • 1/4tsp black pepper
  • 1/2tsp rice vinegar
  • 2tsp minced garlic
Instructions
  1. Add all ingredients to a medium bowl.
  2. Stir together until combined.
  3. Serve immediately or store in the refrigerator, covered, until ready to serve.

This is a great salad to make ahead and serve half portions of with a protein like white fish or scallops.
