Ingredients
  • 2cups zucchininoodled
  • ½cup carrotsnoodled
  • 1cup applenoodled
  • 1tbsp rice vinegar
  • 1tbsp coconut aminos
  • 2tbsp lime juice
  • 1tsp garlicminced
  • 1tsp fresh gingerchopped
  • 2tbsp shallotchopped
  • 1/2scoop powdered steviaor to taste
Instructions
  1. In a small bowl, whisk rice vinegar, coconut aminos, ginger, lime juice, garlic, shallot, stevia, and salt.
  2. Add all noodles to a large bowl and toss with dressing.
  3. Divide into two portions and serve chilled
Recipe Notes

Add ½ tsp sriracha for a spicier version of this salad

Apple noodles can break easily so toss carefully or, add the apple noodles to the plate at the end.

If you don’t have a noodle machine, use a peeler to create the veggie noodles
