Ingredients
  • 7oz chicken breast(100g per 3.5 oz) boneless, skinless, diced
  • 1/2tsp coconut oil-AP
  • 4cups Brussels sproutsshaved – AP
  • 1/2tsp salt
  • 1tsp ground thyme
  • 1tsp lemon zest
  • 1/2 pearcut into thin strips – AP
  • 2tbsp balsamic vinegar
  • 2tsp dijon mustard
Instructions
  1. Heat coconut oil in a medium skillet over medium high heat. Once hot, add chicken.
  2. Brown chicken until cooked through, approx. 4-5 minutes.
  3. Remove chicken to a plate. Add Brussels sprouts, salt, ground thyme and lemon zest to the skillet. Saute until Brussels sprouts are cooked through, approx. 8 minutes, stirring occasionally.
  4. Stir in balsamic vinegar, mustard, pear, and chicken. Cook until warmed through. Serve.
Recipe Notes

You can easily use ground turkey, ground chicken or ground beef instead of the chicken, depending on your mood!
