P2 hCG Diet Seafood Recipe | Tuna Salad Stuffed Tomatoes – AP

Ingredients
  • 7oz canned tunadrained
  • 2tbsp minced red onion
  • 3tbsp plain Greek yogurt
  • 1tsp fresh lemon juice
  • 1/2tsp salt
  • 1/2tsp black pepper
  • 6 medium round tomatoes
  • 2tsp freshly chopped chives
  • 2tbsp chopped celery
  • 2tbsp peeled and chopped cucumber
Instructions
  1. Place tuna in a bowl with celery, cucumber, and red onion. Stir to combine.
  2. In a small bowl, whisk together Greek yogurt, lemon juice, salt and pepper. Add dressing to tuna mixture. Stir to combine.
  3. Remove the core of each tomato and gently scooping out the seeds inside. Carefully stuff the tomatoes with about 1/3 cup of tuna salad. Sprinkle the freshly chopped chives on top of the tomatoes.
  4. Serve immediately.

This is a great salad to make a double batch of to eat throughout the week.
