P2 hCG Seafood Recipe | Southwest Shrimp Salad – AP

Ingredients
  • 7oz shrimp
  • ¾tsp cumin
  • 1tsp garlicminced
  • 3tbsp lime juice
  • 2tsp Franks hot sauce
  • 4cups shredded romaine
  • ½cup chopped red bell pepper
  • ½cup chopped Red onion
  • 1cup cherry tomatoes
Salsa Dressing
  • ¼cup salsa
  • 2tbsp Greek yogurtfat-free
  • ½tsp salt
Instructions
  1. In a small bowl, combine cumin, garlic, lime juice and hot sauce.
  2. Place shrimp in a separate bowl and pour half of lime juice mix over the shrimp. Toss to coat and let marinate for 5 minutes.
  3. Whisk remaining lime juice mix together with salsa, salt and greek yogurt and set aside.
  4. Place romaine, bell pepper, onion and tomato in a large bowl and toss together.
  5. Pour salsa dressing over salad and divide salad between two bowls.
  6. Place shrimp and marinade in a skillet and cook shrimp for 3 minutes on each side or until nicely pink and fully cooked.
  7. Divide shrimp between salad bowls and enjoy!
