P2 hCG Diet Recipe | Grilled Cilantro Shrimp & Tomato Skewers w/ Peach Salsa – AP/SP

Ingredients
  • 7oz shrimp(100g per 3.5 oz) raw, peeled and deveined
  • 1/2tsp salt
  • ¼tsp pepper
  • 2tbsp lime juiceAP
  • ¼cup cilantrofinely chopped
  • 2cups cherry tomatoeswhole
  • ½cup prepared salsafat free, no sugar added – AP
  • ½cup peachesdiced, fresh or frozen defrosted – AP
SP Version:
  • lemon juicesub for the lime juice
  • Omit the peaches
Instructions
  1. Combine the shrimp,salt, pepper, lime juice, and cilantro in a bowl and toss until well coated. Let stand for about 10 minutes.
  2. Thread the shrimp and cherry tomatoes alternately onto skewers.
  3. Preheat a grill pan to medium-high heat and cook the skewers for 2-3 minutes per side, until the shrimp are pink and opaque.
  4. While the skewers cook, mix the diced peaches into the salsa. (For SP, omit the peaches)
  5. Transfer the skewers to plates and top with the peach salsa.
