Instructions
  1. Heat a large skillet over medium heat and add dressing and green onions.
  2. Sprinkle scallops with the salt and then Cook scallops for 1-2 minutes on each side. Remove from pan and set aside.
  3. Add the spinach (and mushrooms if using) to the skillet and cover, allowing spinach to steam for about 2-4 minutes, stirring once or twice.
  4. Serve scallops on top of wilted spinach and garnish with chopped cilantro.
  5. If making AP version, toss spinach with miracle noodles and place scallops on top to serve.
Recipe Notes

If you prefer mushrooms to be more fully cooked, cook them in the skillet for about 5 minutes before adding the spinach.

For extra flavor, toss miracle noodles in 2 tablespoons of additional Asian ginger dressing
