Ingredients
  • 2cups tomatoesdiced
  • 1/4cup green onions
  • 1/4cup cilantrochopped
  • 2tbsp fresh parsleychopped
  • 2tbsp fresh basilchopped
  • 7oz fat free cottage cheese
  • 1/4cup red oniondiced
  • 1tsp salt
  • 1/2tsp pepper
  • 1/4tsp garlic powder
  • 1 1/2tsp balsamic vinegar
Instructions
  1. Combine all of the ingredients together except the cottage cheese. Toss to mix well.
  2. Place cottage cheese on two plates and top with tomato salsa mix. Serve chilled

You can also combine all of the ingredients together, mixing the cottage cheese into the tomato, if desired.
