P2 hCG Diet Protein Veggie Recipe | Thai Chicken Burgers with Basil Spinach | LSP

Ingredients
Burger:
  • 7oz ground chicken
  • 1tbsp fresh chopped mint
  • 2tbsp red curry paste
  • 1tbsp fat free chicken broth
  • 1tsp garlicminced
  • 1tbsp lemon juice
Spinach:
  • 4cups spinach
  • 2tsp water
  • 1/2tsp salt
  • 1tsp garlicminced
  • 1cup basilchopped
Instructions
  1. Squeeze the excess liquid from the ground chicken by squeezing it in a mesh sieve.
  2. Mix the burger ingredients together by hand then form into 2 patties.
  3. Grill for 7 minutes on each side.
  4. For spinach, add the spinach, water, salt and garlic to a saute pan. Saute till just slightly wilted, add the chopped basil, then remove from heat.
  5. Microwave option for spinach: In a large microwavable bowl, combine spinach, salt and garlic. Cover with plastic wrap but leave one corner open slightly. Microwave for 3 minutes. Stir cooked spinach, add chopped basil and stir again.
  6. Place one burger on each plate and divide the spinach between plates as well. Enjoy hot.
Recipe Notes

– Add 2 teaspoons of chopped mint to the spinach to have an extra minty flavor boost.
