P2 hCG Diet Protein Veggie Recipe | Spring Meatza | SP + AP
Meatza Crust:
  • 7oz ground chicken
  • 1/2tsp salt
  • 1/2tsp dried basil
  • 3cups sliced cucumber
  • 1/2tsp salt
  • 1/4cup chopped mint
  • 1tbsp fresh grated ginger
  • 1/4cup lemon juice
  • 1scoop powdered stevia
  1. In a large bowl, toss the cucumber slices with salt and let sit for 5 minutes.
  2. Add mint, ginger, lemon juice and swerve to cucumbers and toss to coat. Set aside to marinate.
  3. In a large bowl, mix ground chicken, dried basil and salt.
  4. Press the chicken mix into an eight inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove the plastic wrap.
  5. Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
  6. Remove from the oven and spread marinated cucumbers across the top of the meatza. Serve immediately!
Recipe Notes

– AP Option for a sauce: mix 2 tbsp yogurt with the ginger and mint and spread across the meatza after baking (cucumbers will just marinate in salt, lemon juice and swerve). – Garnish with chopped mint or fresh dill. – Make the cucumber ribbons rather than slices and pile them high on the meatza for a different look. – AP option: add asparagus ribbons as well.
