P2 hCG Diet Protein Veggie Recipe | Shrimp Boil with Tomatoes | LSP + SP + AP

Ingredients
  • 7oz shrimppeeled, deveined
  • 2tbsp onionchopped
  • 1tbsp minced garlic
  • 1tsp lemon zest
  • 1tbsp lemon juice
  • 1 1/2cups cilantro
  • 1/4cup chicken brothSP Option: use water instead
  • 1tbsp coconut aminos
  • 2cups cherry tomatoeshalved
  • 1/2tsp salt
  • 1/2tsp paprika
  • 1/2tsp cumin
Instructions
  1. In a food processor, combine the garlic, lemon zest, lemon juice, cilantro, chicken broth and coconut aminos. Blend until smooth.
  2. Place the marinade in a resealable bag or large bowl and add in the shrimp. Set aside to marinate for 10 minutes.
  3. Place two large pieces of foil on a work surface, bringing the edges upward slightly.
  4. Place the cherry tomatoes in each foil pack (one cup per foil) and divide the shrimp and marinade between the two packs as well.
  5. In a small bowl, combine the salt, paprika, and cumin then sprinkle the mix over the foil packs.
  6. Fold the sides of the foil over the shrimp and veggies and seal the packets closed.
  7. Place the foil packs on a preheated grill, close the grill and cook for 6 minutes.
  8. Open the grill and shake the packets a little to mix them up. Then cook for another 8 minutes.
  9. Open the packets and garnish with the remaining cilantro.
Recipe Notes

– For AP: add lime slices to the packets before the go on the grill.
