P2 hCG Diet Protein Veggie Recipe | Chopped Thai Chicken Salad | LSP + AP

Ingredients
  • 3cups thinly sliced purple cabbageon mandolin without the teeth – for long thin strips
Lemongrass Dressing:
Chicken:
  • 1/2cup chicken broth
  • 7oz ground chicken
  • 2tbsp green onion
  • 2tbsp fresh lemongrassminced
  • 1/4cup Fresh Cilantrochopped
  • 1/4cup fresh mintchopped
Instructions
  1. Make dressing by whisking together lemon juice, ginger, stevia, lemongrass paste and braggs. Toss cabbage with dressing and set aside.
  2. Add chicken broth to a large skillet and bring to a simmer.
  3. Add chicken to skillet and stir, breaking up the pieces as they cook.
  4. Cook chicken for about 6 minutes, stirring occasionally, then add green onion, lemongrass, cilantro and mint. Stir and cook for one more minute then turn off heat.
  5. Divide cabbage salad between two bowls and top with chicken.
Recipe Notes

– For AP, add shredded broccoli or cauliflower to the salad. – Works well with ground turkey. – If you can’t find lemongrass paste, finely mince fresh lemongrass and use instead.
