Ingredients
  • 2 eggs Eggs
  • 6 Egg Whites
  • 1/4cup chopped pickles
  • 2cups spinachchopped finely
  • 1cup whole spinach leaves
  • Buffalo Sauce:
  • 1/3cup Louisiana hot sauce
  • 1tsp white vinegar
  • 1/2tsp coconut aminos or braggs
  • 1/4tsp cayenne pepper
  • 1/2tsp garlic powder
  • 1/4tsp salt
Instructions
  1. In a small bowl, whisk together the buffalo sauce ingredients.
  2. Add eggs to bowl with sauce and whisk. Add pickles and chopped spinach and stir again.
  3. Place whole spinach leaves in the bottom of muffin cups, covering the bottom and sides with the leaves. You should be able to cover 8 cups.
  4. Divide egg mix into the spinach lined cups.
  5. Bake in a 350-degree oven for 20 minutes.
  6. Remove muffins from the muffin cups right after they come out of the oven to prevent them from sticking.
  7. Serve hot.
Recipe Notes

– For AP version, use kale leaves rather than spinach and add coconut oil to buffalo sauce to make a smoother taste. – You can skip the spinach and use chopped celery in the mix instead.
