P2 hCG Diet Protein Veggie Recipe | Blackened Chicken Bowl | AP + SP
  • 200g chicken breast
  • 1 1/2tsp paprika
  • 2tsp chili powder
  • 1scoop Stevia Powder Extract
  • 3/4tsp pepper
  • 1/2tsp salt
  • 2cups bell pepperssliced (one red, one green)
  • 1/2cup red onionchopped
  • 3cup shredded romaine lettuce
  • 4tbsp chicken broth
  1. In a large ziplock bag combine paprika, chili powder, stevia, pepper and salt.
  2. Add the chicken breast to bag and shake to coat the breast in seasoning.
  3. Cook the chicken in a large non-stick pan, searing each side for 7-8 minutes or until cooked through.
  4. Remove the chicken from the skillet and cut into cubed pieces.
  5. Pour in chicken broth and add sliced bell peppers and chopped onions.
  6. Sauté veggies for about 5 minutes, stirring occasionally.
  7. Serve the chicken on top of the lettuce along with cooked peppers and onions. Pour any remaining pan juices over the top of the bowl as a dressing.
Recipe Notes

– Skip the peppers, reduce the onions and use water instead of chicken broth for an SP recipe.

– Kick up the spice by adding an additional teaspoon of chili powder.

– Serve along with your favorite salsa. The salsa will also act as a dressing for the romaine.
